Butternut Squash Soup 

This came out so delicious so I had to share it with you guys! This was perfect for this snowy cold day, also this is great if you are like me and don’t like vegetables because all together it tastes amazing!


  • Half of a large butternut squash 
  • 2 stalks of celery
  • 1 large carrot
  • 1/2 onion 
  • 2 cloves garlic 
  • 2 cups chicken broth
  • olive oil
  • salt, pepper, cumin & nutmeg (optional) 


  1. Preheat your oven to 375 degrees
  2. Chop all your veggies into cubes or smaller pieces (you can leave the garlic and onion whole) 
  3. Cover veggies with 1 tbsp of olive oil 
  4. Add seasoning to taste, I added 1/2 of all the spices and 1 tbsp of salt 
  5. Mix around the veggies so that they are all evenly coated 
  6. Place in the oven for 25-30 minutes or until tender
  7. Remove from oven and let it cool down
  8. Once cooled add veggies to blender with 1 cup of chicken broth 
  9. Blend until it becomes smooth, add more broth while blending if necessary 
  10. Heat up and enjoy! 

(Optional: I added a dollop or greek yogurt to give it extra creaminess)

Fat: 16 (healthy fat from the olive oil) 

Carbs: 26g
