Healthy shrimp fried rice!

So the lovely people over at rice n’ simple sent me a sample pack with all their rices! I tried them all and I am OBSESSED! They’re not like regular instant rice. They actually taste really really good! They contain no preservatives, artificial flavors, salt or fat. They are about 155 calories per serving and include a sauce to add onto it. I used the shiitake brown rice for this recipe! 

Ingredients: 

  • 1 pack of your choice rice n’ simple (if you can’t find it replace it with 1 serving of brown rice) 
  • 3 oz shrimp 
  • corn, peas, carrots + any other veggies you like 
  • 1 egg 

Directions: 

  1. Start off by placing rice in microwave and cooking for 1 minute, once done set aside. If you are using another type of brown rice prepare according to direction. 
  2. In a separate pan sauté a bit of garlic 
  3. Once garlic is slightly browned add in shrimp 
  4. Once shrimp is getting pink add in all your veggies 
  5. When veggies are tender slowly add in one beaten egg and stir everything together well
  6. Add in cooked rice and stir everything together 
  7. Top off with sauce included (or soy sauce if you don’t have the rice n’ simple) 
  8. Enjoy! 

Nutrition: 

Entire recipe contains about ~350 calories and 13 grams of protein!

My favorite lunches! The numbers are links to some ideas and tips. Enjoy!
Turkey wraps in sprouted whole wheat tortillas. There’s so many toppings and condiments you can play with here. Lettuce, spinach, cucumber, tomato, avocado, cheese, mustard, pesto, chutney, relish, pickles, hummus, literally anything you can think of. (1, 2)  
Greek yogurt also with all the toppings in the world. Honey, maple syrup, frozen berries or mangoes or pineapples, fresh bananas, nuts like almonds and walnuts, seeds of all kinds like flax, chia, sunflower. (1, 2, 3)
Nut or seed butter and fruit sandwich/wrap. My favorite is always going to be Peanut butter but there’s just so many good examples out there. Also try different combinations of fruits. (1, 2) 
Create a little antipasto plate. You can be as simple or as fancy as you want with this. (1, 2)
If you’re having lunch with friends, make yourself a cute little English High Tea. (1, 2) 
Cut up some veggie sticks and eat them with your lunches. Carrots, celery, cucumber, and bell peppers are great examples.
Make your own fruit compote (so easy) to top your nut butter sandwiches or yogurt. (1, 2)
Bake some healthy muffins to have ready for an easy lunch. (1, 2, 3, 4)  
Make some hard boiled or deviled eggs. (1, 2, 3, 4, 5)
Have some granola and add nuts, raisins, cacao nibs and dry fruits to make your own trail mix. (1) 
Lara bars are the only bars I recommend. They are usually 2-5 ingredients tops. 
Make some homemade hummus and falafel. (1, 2)
Make a giant chopped salad with all your favorite veggies. (1, 2, 3, 4, 5, 6, 7)
Make ahead some tuna salad, chicken salad, or potato salad to keep in your fridge. (1, 2, 3, 4, 5)
